We begin with bone in pork butts. We rub the butt with the butt rub and from there the meat goes into the smoker. Once the smoker is up to around 150-160 degrees we stuff the smoker full of wood and let it cook away. About 12 hours later we pull the meat out of the smoker and start pulling the meat apart. We take out the bone, the excess gristle and fat and let it cool.
